Figs (Anjeer), Dates and Coconut Paratha

Fig, Dates and Coconut paratha tastes delicious and are nutrient rich recipe great for kids. Dates are rich in iron and assist in weight gain. They also keep our bones healthy and prevent conditions such as osteoporosis. Figs are good for preventing respiratory conditions like bronchitis and asthama. The high mucilage content in figs help to heal and protect sore throats.

Servings: 4 parathas

Ingredients

  • Wheat Flour  1 cup
  • Maida  1/2 cup
  • Milk  to knead
  • Salt  a pinch
  • Dates  6, soaked in 1/4 cup of milk for overnight
  • Figs  4, soaked in water for overnight
  • Dry Coconut  1 tbsp, desiccated
  • Almonds  7 – 8
  • Poppy Seeds  1 tbsp
  • Roasted Fennel Seed Powder  1/2 tsp
  • Ghee  for frying

Directions

  1. For the dough
    1. Take wheat flour, maida and salt in a bowl, add warm milk slowly and knead it to a soft dough. Cover and keep it aside for half an hour.
  2. For the filling
    1. In a blender, grind together soaked figs and dates.
    2. In a small pan, heat 1/2 tsp ghee and fry the almonds, remove them from fire, cool and grind them to powder.
    3. In the same pan, fry dry coconut also for few seconds. Do not burn them. Remove them on a separate plate.
    4. Now roast poppy seeds also till they turn golden brown. Remove them from fire.
    5. Heat one tablespoon of ghee, add fig and dates paste and fry them well till they start leaving the sides.
    6. Add coconut, almond powder and poppy seeds. Mix well.
    7. Add roasted fennel seed powder and mix.
  3. How to proceed
    1. Divide the dough into equal sized balls and roll each ball into a small circle.
    2. Keep the filling in the centre and fold two sides.
    3. Fold in the other two sides also to give it a rectangle shape.
    4. Now roll the dough into a square shaped chapathi.
    5. Keep it on a hot tava. Once you see bubble on top, flip and apply ghee.
    6. Flip again and apply ghee on other side also. Fry till they turn golden on both the sides.
    7. Serve hot with your favourite dip.
